Vegan mayo is different from regular mayonnaise, which combines egg and oil. Even though the ingredients are different, it is an excellent substitute for regular mayonnaise.

For this recipe you will need:

  • Oil -   Oil is the main emulsifier in the recipe. Neutral oils are recommended for vegan mayo. Sunflower oil is my preferred oil, but safflower, canola, or grape seed oil are great choices for oil in this recipe. 
  • Milk - Almond milk is what I use for my mayo, but soy milk can be used if you are not soy-sensitive
  • Lemon - I prefer using lemon for zip to my mayo, but apple cider vinegar can be swapped out for lemon.
  • Mustard - Mustard is another emulsifier and adds tanginess to vegan mayo. Dijon mustard is what I prefer in this recipe, but both types are great!
  • Salt - Salt is the flavor enhancer in this recipe.
  • Sugar - Sugar balances the acidity in the recipe, sugar substitutes can be used instead of granulated sugar.

How to Make Vegan Mayo
  • Add all ingredients to a tall glass jar (like a mason jar) that can fit your immersion blender.

  • Blend with an immersion blender for 30 seconds, or until the ingredients get to a mayonnaise consistency

  • If you don't have an immersion blender, you can use a  food processor.

  • Adjust salt or lemon juice to taste. Pour the mixture into a jar or other airtight container and refrigerate. This mayonnaise will thicken and stabilize once it has been chilled.




How to Store Vegan Mayonnaise

Store vegan mayonnaise in an airtight container or jar for up to 2 weeks in the refrigerator. The vegan mayo will thicken up a bit as it sits in the fridge.

If the oil separates, use a spoon to give it a quick stir.

  • 2 tablespoons lemon juice
  • 1 cup Sunflower oil
  • 2 teaspoons regular mustard, or vegan Dijon mustard
  • 3/4 teaspoon salt
  • 1/4 teaspoon garlic powder ( optional)
  • 1/2 teaspoon granulated sugar(stevia can be used)
