Pistachio Delight (Watergate Salad) can be a side salad or dessert salad and is a sweet, cool, crunchy dessert made with pistachio pudding mix, whipped topping, crushed pineapple, mini marshmallows, and pecans.

Apparently known by quite a few names over the years, including Pistachio Pineapple Delight - believed to be the original name of the recipe Kraft used when they introduced their pistachio pudding to the marketplace. This easy sweet salad combines pistachio-flavored pudding, pineapple, and nuts for a refreshing twist on ambrosia salad.








What’s the Origin of Watergate Salad?

According to Kraft Kitchens, when the recipe for Pistachio Pineapple Delight was published, a Chicago food editor renamed it Watergate Salad to promote interest in the recipe when she mentioned it in her column. Another theory is that the recipe was developed by a Sous Chef at the Watergate Hotel, although this was never confirmed. The salad became very popular after the Watergate scandal.

5 Simple Ingredients:
  • Crushed Pineapple
  • Mini-Marshmallows
  • Cool Whip
  • Chopped Pecans
  • Pistachio Pudding Instant Mix

Start with first 4 Ingredients
In a bowl, mix crushed pineapple including juice, pistachio pudding mix, pecans, and mini marshmallows.

Add whipping cream, mix well, and refrigerate for 2 hours.

Optional Add-ins: Coconut flakes, mandarin orange slices, chopped cranberries, and maraschino cherries.

Pistachio Delight (Watergate Salad) can be a side salad or dessert salad and is a sweet, cool, crunchy dessert made with pistachio pudding, whipped topping, crushed pineapple, mini marshmallows, and pecans.

Ingredients:
  • 1 can (20 oz.) crushed pineapple, undrained
  • 1 box (3.4 oz) instant pistachio pudding mix
  • 2 1/2 cup mini marshmallows
  • 1/2 cup chopped pecans
  • 1 tub (8 oz.) thawed cool whip
  • Optional Add-ins: Mandarin oranges


Instructions:
  1. Mix the first 4 ingredients in a mixing bowl.
  2. Add Cool whip
  3. Refrigerate for 2 hours
  4. Tip: Thawing frozen unopened cool whip may take 2-4 hours to thaw in the refrigerator.
