How to make Easy Homemade Buttermilk Pancakes

    In a large bowl, sift together flour, baking powder, baking soda, and salt.

      In a small bowl, combine egg, vanilla extract, and *buttermilk. Whisk together until blended, don't overmix. 
      If you over-mix, the gluten will develop from the flour in your batter, making your pancakes chewy instead of fluffy. 

       Add to flour mixture, stirring only until blended. Add melted butter and sugar to the batter and blend. It's okay to have some lumps in pancake batter or streaks of flour. 


      *Buttermilk substitute: Place 1-1/4 cup milk in a bowl and add 1 tablespoon of lemon juice

      • Heat a nonstick skillet over medium-low heat. Grease griddle with cooking spray. Drop ¼ cup batter on the pan and spread into a circle. 
      • Cook until bubbles begin to form on the surface and the edges begin to brown. Cook until lightly browned on each side, 1 to 2 minutes per side. Repeat with the remaining batter.
      • Serve with butter and warm syrup. Top with all your favorites

      How to Store & Freeze Leftover Pancakes

      • Freeze in a single layer on a baking sheet: Place your cooled pancakes in an even layer on a parchment paper-lined baking sheet. They typically take about an hour to freeze.
      • Place a sheet of wax paper between each pancake and stack it together.
      • Store in a freezer storage bag. Pancakes are good for up to 3 months.

      • 1 1/4 cup all-purpose flour
      • 1 tsp baking soda
      • 1 tsp baking powder
      • 1/4 tsp salt
      • 1 egg, beaten
      • 1 1/4 cups buttermilk
      • 2 tbsp butter, melted
      • 3 tbsp sugar
      • 1/4 tsp vanilla extract

      2. In a small bowl, combine egg, vanilla extract, and buttermilk. Whisk together until blended, don't overmix. Add to flour mixture, stirring only until smooth. Add melted butter and sugar to the batter and whisk until combined.
