Cucumber Tomato Salad with Dill Vinaigrette

Cucumber Tomato Salad with Dill Vinaigrette is inexpensive, easy to make and so refreshing on a hot day.





Ingredients for Cucumber Tomato Salad

  • English Cucumber - also called a Hot House cucumber, has a mild and sweet flavor with a crisp texture. English cucumbers are the ones sold in plastic wrap because of their thinner, unwaxed skin. 
  • TomatoesPerfectly ripe tomatoes should be kept at room temperature on the counter away from sunlight.
  • Red Onion - I prefer red onions for salads, they have a relatively mild flavor.
  • Dill - Fresh dill is preferable, but you can use dried dill when fresh dill is not available. For every tablespoon of fresh dill, you can replace it with 1 tsp. of dried dill.

Putting the Cucumber Tomato Salad together.


  • Slice English cucumber lengthwise, then cut half-moon slices.
  • Chop tomatoes, I used vine-ripened, but any ripe tomato can be used.
  • Thinly slice red onions. Place in a large bowl.
  • Whisk together the dill, olive oil, red wine vinegar, sugar, salt, and pepper, pour over the vegetables tossing them carefully together.
  • Refrigerate at least 20 minutes before serving, or up to overnight.

Cucumber Tomato Dill Salad
The Classic side dish, perfect for potlucks and summertime dishes.

Ingredients:
  • 1 large (4 cups) English cucumber (Hothouse), sliced 
  • 4 tomatoes, chopped
  • 1/4 cup fresh dill, chopped or 1 tbsp of dried dill
  • 1/2 large red onion, thinly sliced
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tsp sea salt
  • 1/2 tsp ground pepper
  • 2 tbsp granulated sugar
Instructions:

  1. Add the vegetables to a large bowl, then whisk together the dill, olive oil, red wine vinegar, sugar, salt, and pepper, pour over the vegetables tossing them carefully together.
  2. Refrigerate at least 20 minutes before serving.
