Cucumber Tomato Salad with Dill Vinaigrette is inexpensive, easy to make and so refreshing on a hot day.
Ingredients for Cucumber Tomato Salad
- English Cucumber - also called a Hot House cucumber, has a mild and sweet flavor with a crisp texture. English cucumbers are the ones sold in plastic wrap because of their thinner, unwaxed skin.
- Tomatoes - Perfectly ripe tomatoes should be kept at room temperature on the counter away from sunlight.
- Red Onion - I prefer red onions for salads, they have a relatively mild flavor.
- Dill - Fresh dill is preferable, but you can use dried dill when fresh dill is not available. For every tablespoon of fresh dill, you can replace it with 1 tsp. of dried dill.
Putting the Cucumber Tomato Salad together.
- Slice English cucumber lengthwise, then cut half-moon slices.
- Chop tomatoes, I used vine-ripened, but any ripe tomato can be used.
- Thinly slice red onions. Place in a large bowl.
- Whisk together the dill, olive oil, red wine vinegar, sugar, salt, and pepper, pour over the vegetables tossing them carefully together.
- Refrigerate at least 20 minutes before serving, or up to overnight.

Ingredients:
- 1 large (4 cups) English cucumber (Hothouse), sliced
- 4 tomatoes, chopped
- 1/4 cup fresh dill, chopped or 1 tbsp of dried dill
- 1/2 large red onion, thinly sliced
- 1/3 cup olive oil
- 3 tbsp red wine vinegar
- 2 tsp sea salt
- 1/2 tsp ground pepper
- 2 tbsp granulated sugar
Instructions:
- Add the vegetables to a large bowl, then whisk together the dill, olive oil, red wine vinegar, sugar, salt, and pepper, pour over the vegetables tossing them carefully together.
- Refrigerate at least 20 minutes before serving.
